Chinese Chicken Salad with Sesame Ginger Dressing

Oh yum! (I added a bit of feta cheese, and that made it even tastier.)

Salad

  • 2 cups spinach, washed and dried
  • 1 small Boston lettuce, washed and dried
  • 2 green onions, slivered
  • 1 cup watercress leaves
  • 4 grilled chicken breasts

Dressing

  • 4 tsp soy sauce
  • 1/4 cup olive oil
  • 1/2 cup lime juice
  • 2 tsp brown sugar
  • 2 tsp sesame oil
  • 2 tsp finely chopped ginger
  • 2 tsp Dijon mustard

Combine spinach, lettuce, green oinions, and watercress leaves. Place on a platter and arrange warm chicken breasts on top.

In a small bowl, whisk together the dressing ingredients and drizzle over salad.
