Ginger and Sweet Potato Soup
This is an absolutely delicious, gourmet soup. It made f00 say "Wow!" three times the first time he ever tasted it.
- 6 cups of sweet potatoes, cubed
- 3 1/2 cups chicken or soy stock
- 1 Tbsp minced ginger
- 1/2 cup unsweetened coconut milk
- 3 Tbsp lime or lemon juice
- salt and pepper to taste
- 1/4 cup sliced toasted almonds
- 1/4 cup fresh coriander
- 1 tsp lime zest
In a saucepan, combine sweet potatoes, stock, and ginger. Bring to a boil. Reduce heat, cover, and simmer until potatoes are tender (about 10 minutes).
Transfer to a blender or food processor and purée until smooth. Return to pan. Whisk in coconut milk, lemon/lime juice, and salt and pepper. Cook over low heat until heated through.
Ladle into bowls and garnish with almonds, coriander, and lime zest.
