Rice Pudding
Makes 4 servings
Time: about 30 minutes
I never liked rice pudding until I made this!
- 1 cup cooked rice (I used Basmati)
- a few dashes of salt
- 2 1/2 cups milk
- 1/2 cup sugar
- 1 egg, beaten
- 2/3 cup raisins (optional)
- 1 Tbsp butter/margarine
- 1/2 tsp vanilla
- Cinnamon to taste
- Combine rice, 2 cups of milk, sugar, and salt in heavy saucepan. Cook over medium-high heat, stirring
occasionally, until thick and creamy (15-25 minutes).
- Blend remaining 1/2 cup milk with egg. Stir into rice mixture.
- Add raisins, if desired.
- Cook 2 minutes longer, stirring constantly.
- Add butter, vanilla, and cinnamon.
- Spoon into serving dishes.
