Rice Pudding

Makes 4 servings

Time: about 30 minutes

I never liked rice pudding until I made this!

  • 1 cup cooked rice (I used Basmati)
  • a few dashes of salt
  • 2 1/2 cups milk
  • 1/2 cup sugar
  • 1 egg, beaten
  • 2/3 cup raisins (optional)
  • 1 Tbsp butter/margarine
  • 1/2 tsp vanilla
  • Cinnamon to taste
  1. Combine rice, 2 cups of milk, sugar, and salt in heavy saucepan. Cook over medium-high heat, stirring occasionally, until thick and creamy (15-25 minutes).
  2. Blend remaining 1/2 cup milk with egg. Stir into rice mixture.
  3. Add raisins, if desired.
  4. Cook 2 minutes longer, stirring constantly.
  5. Add butter, vanilla, and cinnamon.
  6. Spoon into serving dishes.
